Vegetarians just don't eat meat. You're thinking of vegans, who don't eat anything produced by an animal, like dairy, eggs, and even honey. Colin's just a vegetarian and he's lactose intolerant.
There are, however, various levels of lactose intolerance. He probably means he can't eat dairy products but can eat baked goods even if they use some butter - but probably couldn't eat the buttercream frosting. Then there are people who are SEVERELY lactose intolerant. They can't have anything with even a smidge of butter, even if it's baked in. (I tried to cook dinner and dessert for my BFF's college roommate, who had this problem, when she came to town. SO. DIFFICULT.) And then there are people like me, who are what my BFF has dubbed "lactose retarded". I can eat dairy products, but not too much of them or I get a stomachache. Like I can eat ice cream, because there's so little cream and so much flavoring and sugar, but I can't have a big cone. I can have cheesecake, but not a big slice. I can have cheese on things like pizza and pasta, but not too much. I can have yogurt, but only if I mix in a lot of cereal. That's actually why I have a different "kyeck" this year - for years I've had a cheesecake, which I love, but last year it started bothering my stomach and in the ensuing year I've gotten more sensitive. Also, the reason I request it is because no one else in my family likes cheesecake, so I never get to eat it. But that also means I end up eating an entire cheesecake over the course of a week and a half, and yeah, my stomach wouldn't love that.
